the laziest meal prep you'll ever see


Hey Reader,

I used to stand in my kitchen at 6pm, staring into the fridge like it owed me something. Now I don't. And it's not because I meal prepped 47 containers on Sunday like a fitness influencer.

It's because I removed the thinking entirely.

Here's my lazy girl system:

Carbs — I don't want to cook them or portion them. Rice cakes, store bought roti/phulka, frozen Stonefire mini naans, grain bread. Already portioned. Zero decisions. Maybeeee I'll make a pot of rice sometimes.

Veg — I make TWO veg sides for the whole week. Either a quick sabzi/sauteed veg Indian style or sheet pan roasted veg or both. That's it.

Protein — yesterday I Instant Pot'd chicken for enchiladas and chilaquiles. 5 min of actual effort. (Recipe here 👉 )
I also have a tub of greek yogurt, eggs + egg whites in the fridge at all times. On usual weeks I make a chicken curry or kheema.

Then the week basically runs itself —

Breakfast is always one of two things: rice cake + berries + greek yogurt, or pb + rice cake + banana. plus chai of course...

Lunch is a veg omelette I throw together in 5 min.

Dinner is just... assemble and reheat. Whatever I prepped above.

No worrying about how to stay on track with food. No 6pm staring contest with the fridge.
One carb. One veg. One protein. DONE.
