What I’m eating for dinner this week ☀️


One thing I love about summer?

I naturally crave lighter, fresher foods.

This week, one of my go-to dinners has been fresh spring rolls packed with colorful veggies, herbs, and protein.

A lot of traditional wellness systems, including Ayurveda, talk about choosing foods with a cooling effect during hotter months. Whether or not you’re into Ayurveda, I’ve noticed I naturally want crisp vegetables, fresh herbs, and lighter meals when the weather warms up.

My current fresh roll combination:

🥕 Carrots
🥒 Cucumber
🥬 Lettuce
🫑 Bell pepper
🌿 Mint and cilantro and basil
🍤 Shrimp (or tofu works great too)
🍜 Vermicelli rice noodles

The secret weapon is the dipping sauce.

Instead of using a traditional peanut sauce that’s mostly peanut butter, I make mine with PB2. It still gives me that peanut flavor I love, but with much less fat and more protein, which makes it easier to fit into my overall calorie goals during my fat loss phase.

What I love about meals like this is they check a lot of boxes:✅ High volume
Lots of colorful vegetables
Satisfying protein
Great for warmer weather
Doesn’t leave me feeling overly full or sluggish

One of the biggest misconceptions about fat loss is that you have to eat boring food.

Most of my clients are surprised that we spend far more time finding meals they genuinely enjoy than trying to eliminate foods from their diet.

The goal isn’t to suffer your way to a goal weight.

The goal is to build a way of eating you actually want to continue and actually fuels your life and workouts.
